All kinds of games with very advanced AI. But to be more specific, I play a lot of RPG such as KotOR and first-shooters like Halo.

Yeah Halo for it's time was up there.But these days probably FEAR
Stalker, Crysis, Fear1/2, Civ series and PDZ
Galactic Civilization 2 has some very insane AI.
Well from the genres you've asked the STALKER series are the only games where I was actually impressed and surprised by the AI though as others have said it can do some stupid things, but the AMK/Oblivion Lost mod actually enhances the AI quite a bit. Going back a few years Far Cry 1 and FEAR 1 topped the AI charts but these days they don't really seem all that special. Crysis and Far Cry 2 didn't impress me much in the AI department, and I don't know of any RPGs that showed out stunning AI.
The bad guys in Crysis are pretty clever most of the time.
Real Life has the best A.I..
Definitely FEAR.

You're right, Real Life's A.I. is so intelligent it's not actually artificial.
